Beef Bruschetta w/ Avocado

INGREDIENTS

* 1 TBSP black pepper

* 1 1/2 chili powder

* 5 beef tenderloin steaks, trimmed into an inch thick

* Cooking spray

* 1/4 Cup green onions

* 1/4 Fresh basil

* 6 cups arugula

* 20 cherry tomatoes cut into halves

* 1 Avocado sliced

* French bread cut into however you like - toasted


 

INSTRUCTIONS

* You can make salad dressing or use Italian salad dressing.

* Combine steak, pepper, salt, chili powder - mix well.

* Spray pan and cook steak about five minutes on each side.

* Combine onion, tomatoes, basil.

* On toasted french bread, lay arugula on bread, top off with steak, avocado, tomatoes, and drizzle with salad dressing of your choice.
