Grandma's Crispy Cornbread

INGREDIENTS

• 1 cup all purpose flour

• 1 cup yellow cornmeal

• 3 tablespoons sugar

• 2 teaspoons baking powder

• 1 teaspoon salt

• 1/2 teaspoon baking soda

• 1 cup whole buttermilk

• 1/3 veggie oil

• 1 large egg, lightly beaten


 

INSTRUCTIONS

• Preheat oven to 400*. pour oil to a depth of 1/8 inch in a 10 inch cast-iron pan. Place skillet in oven to preheat.

• In a medium bowl, combine flour, cornmeal, sugar, baking powder, salt, and baking soda. Add buttermilk, 1/3 cup oil, and egg, stirring until combined. Pour mixture over hot oil in skillet.

• Bake until a wooden pick inserted in center comes out clean, 18-22 minutes.

Let cool on rack and nom nom nom nom...... =)
