Spiced Sweet Potatoes

This makes 6-8 servings


INGREDIENTS


• 4 Lg. sweet potatoes, peeled and cut into 1-inch cubes • 12 tablespoons of butter

• 1 Cup firmly packed brown sugar

• 1 Cup granulated sugar

• 3 Oranges

• 1 Cup water

• 2 teaspoons pumpkin pie spice


 

INSTRUCTIONS


In large stockpot, bring potatoes and water to cover to a boil over high heat. Reduce heat, and simmer until just fork-tender, about ten minutes. Remove from stock-pot, draining well.

• In same pot, melt butter over medium heat. Add sugars, orange slices, and 1 cup water. Cook, stirring frequently, until sugar is dissolved, 4 - 5 minutes. Add pumpkin pie spice, stirring well. Return potatoes to pot. Cook until potatoes are soft, 10 - 15 minutes.
