Red Pepper Lentil Soup

INGREDIENTS

• 1 finely chopped yellow onion

• 1 finely chopped ginger

• 1 garlic cloves

• 1/2 Aleppo Pepper

• 3 chopped red tomatoes

• 3 cups red lentils; rinsed and drained

• 6 cups veggie broth


 

INSTRUCTIONS

• In large pot heat 3 tbs olive oil, onion, ginger, garlic. Cook for 10 minutes or until soft. stir in red pepper. Cook for one minute.

• Add tomatoes, lentils, broth and 2 cups of water.

• Bring to a boil, reduce heat simmer for 25 - 30 minutes

• Add salt & black pepper to your liking.
