Avocado Bowls

INGREDIENTS

  • 1/2 Cup of water

  • 1 Cup of red quinoa

  • 1 Tbsp. Olive Oil

  • 5 Eggs

  • 1/2 Tsp Salt

  • 1/2 Tsp black pepper

  • 1 Cup cherry tomatoes cut in half

  • 1/2 Cup feta cheese

  • 2 Avocados - sliced


 

INSTRUCTIONS

  • In boiling water - add quinoa - reduce heat, cover, simmer for 12 minutes

  • Remove from heat (covered)

  • Small saucepan make eggs

  • In bowl add quinoa, avocados, tomatoes, cheese
