Cajun Shrimp, Mushroom, Asparagus Risotto

Ok you guys - It's been a hot minute since I've posted. My happy life, and my own happy hour got in the way! So, here we go!


INGREDIENTS

* 1lb. shrimp, deveined, and peeled

* Garlic to your liking

* Chicken Broth to your liking (I used two cubes of chicken bullion cubes)

* White Cooking wine (drizzle)

* 1/2 Stick of unsalted butter

* Cajun seafood seasoning

* 2 bags of mushroom, asparagus, risotto medley - I added extra mushrooms since I love mushrooms)



INSTRUCTIONS

* I made my shrimp in garlic butter, chicken broth, white wine, unsalted butter and cajun seasoning. All of which you should make to your liking -others may want more cajun, or more garlic - taste as you cook.

* Once shrimp is cooked (usually three minutes or so) - add your melody

* You may add as much as you like according to your favorites. I am a lover of mushrooms so I made a side of fresh mushrooms to add to the pan.

* Cook until ready - you'll notice when the risotto is soft.

* I added asiago cheese on top and damn! It's delicious.
