INGREDIENTS
• 2 lbs. cod
• 2/3 cups mayo
• 2 limes, squeezed
• 1 tsp. chili powder
• 2 tbsp. veggie oil
• 1/3 cup flour
• 10 small tortillas
• 1 cup shredded cabbage
• 2 small carrots, thinly peeled; 1 cup
INSTRUCTIONS
• In large skillet heat oil over medium. In a shallow dish combine flour, and add 1/2 tsp. salt.
• Dip fish in mixture above and cook for 4 minutes. Lay on napkin to dry.
• Wrap tortillas in paper towels - heat in microwave for 30 seconds.
• Top tortillas with cabbage, fish, and carrots. Drizzle with lime sauce (see below).
*** Chili lime sauce: In a medium bowl stir together mayo, lime juice, and chili powder. Add fish and mixture together then add to tortillas.
