Mixed Greens & Arugula Salad w/ Orange Vinaigrette

SALAD

INGREDIENTS:


• 1 head red leaf lettuce - torn

• 1 head butter lettuce - torn

• 1 (5 oz) bag fresh arugula

• 3 oranges, sectioned

• 1 bulb fennel, thinly sliced


** In a large bowl, toss together lettuces, oranges, and fennel


 

ORANGE VINAIGRETTE

INGREDIENTS:


• 1 Shallot, finely chopped

• 1/2 cup champagne vinegar

• 1/4 cup fresh orange juice

• 2 tablespoons minced fresh tarragon

• 1 tablespoon whole - grain mustard

• 1 tablespoon honey

• 1/2 teaspoon salt

• 1/2 teaspoon ground black pepper

• 3/4 cup extra virgin olive oil


** in a small bowl, combine shallot and vinegar; let stand for 15 minutes.

** Add orange juice, tarragon, mustard, honey, salt, and pepper, whisking to combine. Add orange juice, oil in a slow, steady stream, whisking until combined. Serve immediately, or cover and refrigerate for up to 1 week.
