Tuna Melts w/ Olives

INGREDIENTS

• 8 thick slices of Italian bread

• 3 5 oz. tuna packed in olive oil

• 1/4 cup of pitted green olives

• 1 large lemon (2 tsp. zest and 1 tbsp. of juice)

• 2 tsp. dijon mustard

• 1/4 lbs. thinly sliced havarti cheese


 


INSTRUCTIONS

• Preheat broiler. Arrange bread slices on a baking sheet. Broil 4 inches from heat 2 minutes or until lightly toasted, turning once. In a medium bowl combine undrained tuna, olives, lemon zest and juice, mustard, and 1/4 tsp. black pepper. Stir to combine and break up tuna.

• Divide tuna mixture among bread slices, top with cheese. Broil 1 1/2 to 2 minutes or until melts.
