Cornish Games Hens

INGREDIENTS


1/2 cup unsalted butter, softened

• 1 tablespoon chopped fresh sage

• 1 tablespoon chopped fresh parsley

• 1 tablespoon chopped fresh thyme

• 1 teaspoon salt

• 1 teaspoon lemon zest

• 1/2 teaspoon of black pepper

• 4 (2 1/2 to 3 lbs.) frozen cornish game hens, thawed

• 2 lemons haved

• 1/2 bunch fresh thyme sprigs

• cups chicken broth

 

INSTRUCTIONS


Preheat oven to 375*. Line a roasting pan with foil, and place a rack over foil.

• In small bowl - stir together butter, sage, parsley, chopped thyme, salt, zest and pepper.

• Gently rub hens with butter mixture. Place one lemon half and 1/4 of thyme sprigs in cavity of each bird. Tie legs with butcher's twine. Place hens on prepared rack.

• Bake until an instant-read thermometer registers 165*, about one hour and 15 minutes, pouring one cup broth over hens every 15 minutes. Let stand for 5 minutes Serve immediately.
