Put the lime in da coconut!

INGREDIENTS

• 1 green onion

• 1/4 lime juice

• 1.5 lbs peeled shrimp

• 1 (8 oz) chopped asparagus

•1 tsp. ginger

• 1.5 cups black rice

• 1 cup unsweetened coconut milk

• 1 chopped chile



 

INSTRUCTIONS

• In large saucepan combine rice, 1 1/2 cups water, coconut milk, and 3/4 tsp salt to a boil - simmer for 30 minutes.

• In large skillet with 1 tbsp of veggie oi, add chile, and ginger for 45 seconds, add asparagus - cook till tender.

• Add 1 tbsp oil to skillet add shrimp cooking for about 3 minutes.

• Add all together and lime juice, green onion - Wa-laaa. Coconut - lime Shrimp and Rice.
